I know everyone finds it incredibly annoying when a recipe blog post leaves the actual recipe at the end, so I started with it instead! If you make this deliriously indulgent Banana Chocolate mug cake at home, take a picture and tag me so I can send you a virtual fist bump! <3
1 large banana
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
Dash of cinnamon
Teaspoon maple syrup
2 tablespoons almond flour
Chopped pecans or walnuts, chocolate chips
Mash the banana in the mug, then add the other ingredients and mix well. Start with 3 minutes in the microwave—you may need up to another minute, but check first, because as you can see, my mug cake had a minor micro explosion 😂
This is a variation of many other mug cakes all over Instagram—the egg can become a flax egg, almond flour can become coconut flour, sugar and spices can be added as you wish. It’s so easy to customize, make gluten free, high-protein (add a scoop of protein powder) or vegan!
When it was done, I poured some milk on top and enjoyed every single chocolate-y bite.
Valentine’s Day Dessert
I won’t lie . . . I’ve got my sweet hubby to celebrate with on VDay, but sometimes you just need a super tasty dessert for one. It’s easy to double up on this recipe and make two mug cakes for you and your SO or best gal pal.
I also love that this mug cake incorporates ingredients you’ve likely got lying around the house, along with an overripe banana sitting in the fruit bowl and stressing you out (or is that only something that I do??)
